White Chicken Chili That's Actually Creamy

Thick, creamy white chicken chili made in one pot and ready in 50 minutes. Rotisserie chicken, white beans, and mild green chilies come together in a smooth, rich broth. The trick is two simple steps that stop the cream cheese from ever going lumpy.

Ingredients
  

  • 1 tbsp olive oil [15ml]
  • 1 small yellow onion diced [about 90g]
  • 3 cloves garlic minced
  • 4 cups low-sodium chicken broth [950ml]
  • 2 cans 4 oz / 113g each diced mild green chilies, undrained
  • 1½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ¼ tsp cayenne pepper
  • Salt and freshly ground black pepper to taste
  • 2 cans 15 oz / 425g each cannellini beans, drained and rinsed
  • 1 cup frozen corn kernels [150g]
  • 8 oz Neufchatel cheese or cream cheese, cut into cubes, softened to room temperature [225g]
  • 2½ cups cooked shredded chicken rotisserie recommended [350g]
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro plus more for serving
  • Optional toppings: shredded Monterey Jack cheese sliced avocado, sour cream, tortilla chips, lime wedges

Method
 

  1. Get the chicken ready. Pull or shred 2½ cups / 350g of cooked rotisserie or leftover chicken with two forks. Set aside — it goes in at the very last step.
  2. Cook the onion. Heat 1 tbsp olive oil in a large pot (at least 5 quarts) over medium-high heat. Add the diced onion and cook, stirring occasionally, until soft and translucent (see-through), about 4 minutes.
  3. Add the garlic. Stir in the minced garlic and cook for 30 seconds, until fragrant. Stir constantly — garlic burns fast.
  4. Add the broth and spices. Pour in the 4 cups of chicken broth. Add the green chilies, cumin, paprika, oregano, and cayenne. Stir well. Taste the broth and hold back on extra salt if it already tastes salty.
  5. Simmer the broth. Raise the heat to high and bring to a full boil (large, rolling bubbles). Lower the heat to medium-low and simmer (small, steady bubbles) uncovered until fragrant, about 15 minutes.
  6. Make the bean purée. Add 1 cup of the drained beans to a food processor or blender with ¼ cup of hot broth from the pot. Blend until completely smooth, about 30 seconds. Set the remaining whole beans aside.
  7. Add beans and corn. Stir the bean purée, whole beans, and corn into the pot. Simmer over medium-low heat, stirring occasionally, until the broth has thickened, 5–8 minutes.
  8. Take the pot off the heat. Remove the pot completely from the burner. Let it cool for 60 seconds before the next step.
  9. Melt in the cream cheese. Add the room-temperature cream cheese cubes. Stir steadily for 2–3 minutes until every cube has melted and the broth looks smooth. (If small lumps remain, use an immersion blender directly in the pot.)
  10. Add the chicken. Return the pot to low heat. Stir in the shredded chicken, lime juice, and cilantro. Heat for 2–3 minutes until the chicken is warmed through. Do not boil. Taste and adjust seasoning. Serve with desired toppings.

Notes

Cream cheese tip: The cheese must be fully softened before adding. Cold cream cheese causes lumping. Remove it from the fridge 30–45 minutes before cooking.
Beans: Great northern beans are a direct swap for cannellini. Any small white bean works.
Spice level: For zero heat, leave out the cayenne. For more heat, add an extra ¼ tsp cayenne or stir in a minced jalapeño at Step 2.
Raw chicken option: Add 1½ lbs / 680g boneless skinless chicken breasts at Step 4. Simmer 20–25 minutes until cooked through, then remove and shred before returning to the pot.
Slow cooker: Add raw chicken, broth, spices, beans, corn, and chilies. Cook low 5–6 hours or high 3 hours. Shred chicken, return to pot, stir in softened cream cheese, cook on high 10 more minutes.
Freezing: For best results, freeze before adding cream cheese and chicken. Stir them in fresh after reheating.
