Corn Chowder

Creamy, hearty and comforting one-pot corn chowder loaded with sweet corn, tender potatoes, smoky crispy bacon and fresh chives. Rich, flavorful and ready in 1 hour - perfect with crusty bread!

Ingredients
  

  • **For the corn stock:**
  • - 4 cups 950 ml chicken broth
  • - 1 cup 240 ml whole milk
  • - Stripped cobs from the corn below
  • **For the chowder:**
  • - 4 cups about 600g corn kernels, from 5–6 ears fresh corn (cobs reserved for stock)
  • - 4 oz 115g bacon, diced (about 4 slices)
  • - 3 tablespoons 42g butter, divided
  • - 1 medium onion diced (about 1 1/2 cups)
  • - 2 celery stalks diced (about 3/4 cup)
  • - 1 carrot diced (about 1/2 cup) — optional
  • - 3 garlic cloves minced
  • - 1/3 cup 42g all-purpose flour
  • - 1 lb 450g Yukon Gold potatoes, cut into 1/2-inch (1.25 cm) cubes
  • - 1/2 teaspoon dried thyme
  • - 1 bay leaf
  • - 3/4 cup 180 ml heavy cream
  • - 1 1/2 teaspoons salt plus more to taste
  • - 1/4 teaspoon black pepper
  • - Pinch of cayenne pepper optional
  • - 2 tablespoons chopped chives or green onion to garnish

Method
 

  1. Cut the kernels off the corn cobs; set kernels aside. Place the stripped cobs in a large pot with the chicken broth and milk. Bring to a boil, then reduce heat and simmer uncovered for 15 minutes. Remove and discard the cobs with tongs.
  2. In a large Dutch oven over medium heat, cook the diced bacon until crisp, 6–8 minutes. Remove with a slotted spoon to a plate, leaving the fat in the pot.
  3. Add 1 tablespoon of the butter to the pot. Add the onion, celery, and carrot; cook, stirring occasionally, until softened and translucent, about 7–8 minutes. Stir in the garlic and cook 1 minute more.
  4. Add the remaining 2 tablespoons butter. Once melted, sprinkle in the flour and stir constantly for about 1 minute, until pale gold.
  5. Slowly whisk in the corn stock until smooth. Add the potatoes, corn kernels, thyme, bay leaf, salt, pepper, and cayenne. Bring to a light boil, then reduce heat and simmer uncovered 15–18 minutes, until the potatoes are tender.
  6. Remove the bay leaf. Take the pot off the heat and let it sit for a minute, then stir in the heavy cream and most of the bacon.
  7. Taste and adjust salt and pepper. Ladle into bowls and top with remaining bacon and chives.

Notes

  • Frozen or canned corn: Use 4 cups frozen (thawed) corn or two 15-oz cans, drained, in place of fresh. Skip the cob-simmering step and simmer the broth and milk alone for 5 minutes instead.
  • Storage: Refrigerate in an airtight container for up to 4 days. Reheat gently over low heat, stirring often; avoid boiling.
  • Freezing: Not recommended — the dairy and potatoes can separate and turn grainy after thawing.
  • Vegetarian version: Omit the bacon, use butter or olive oil in step 3, and use vegetable broth in place of chicken broth.
