  • ½ tsp dried oregano
  • Salt and black pepper, to taste
  • 4 oz / 113g full-fat cream cheese, cubed and softened (optional — leave out for dairy-free)

Ingredient notes:

  • Rotel: A US brand — diced tomatoes blended with green chiles. Not sold everywhere. Swap: 1 can (14.5 oz / 411g) plain diced tomatoes + 1 can (4 oz / 113g) mild diced green chiles.
  • Heavy cream: For a richer finish, swap the cream cheese for ¼ cup / 60ml heavy cream (called double cream in the UK and Australia) stirred in at Step 8.
  • Cornstarch / cornflour: Not used here, but if you want a thicker broth, whisk 1 tbsp cornstarch (cornflour in the UK and Australia) with 2 tbsp cold water to make a slurry — a smooth, thin liquid mixture — and stir it in during Step 9.

Before You Start

Dice the onion and jalapeño into small, even pieces — about ¼ inch / 6mm, roughly the size of a pea. Even pieces cook at the same speed.

Remove the jalapeño seeds and white membrane before dicing if you want mild heat. Leave them in for more.

How to Make Chicken Tortilla Soup

Step 1: Get the broth ready.
Measure 4 cups / 950ml from a carton and set it near the stove. If using stock cubes, dissolve 1–2 cubes in 4 cups / 950ml hot water in a heatproof jug. Stir until no granules remain.

Step 2: Soften the onion and jalapeño.
Warm 1 tbsp olive oil in a large pot — at least 5 quarts / 4.7L — over medium heat. Add the onion and jalapeño. Cook, stirring occasionally, until the onion is soft and see-through at the edges — about 5 minutes. It should look pale and limp, not browned.

Step 3: Toast the garlic and spices.

Use tongs to lift the chicken pieces onto a cutting board. Use two forks to pull the meat apart into rough shreds. Return all the shreds to the pot and stir them in.

Storage and Reheating

Fridge: Cool the soup completely, then transfer to an airtight container. It keeps for up to 4 days. The flavor deepens overnight.
